Triperie

A place to buy the tripes. A place outside from its biggest times. A profession outside from it’s biggest times.

While looking for the etymology of the word for which the dictionary of the Académie française does not know clearly it’s origine, I came across the density and distribution in France of the profession. We learn from this map and history graph [^1] that the tripier or tripière has it best times around 1850 and seems to be a vanishing profession.
